Ok so for most of you reading this, you know that I am not really a cook. My sister does most of the cooking and I just assist and clean up. Well we started this new rule that I cook Sunday night dinners, and we only did this because my friend Laurie has bought me 2 Weight Watcher cookbooks in the last couple of months and I have found some recipes that I wanted Doreen to try. So she thought it would be fun to make me in charge of dinner one night a week.
So the first Sunday was last week and I made Orange Beef with Brocoli and it was nasty!! My mom liked it (but she likes everything), me and Doreen ate it but said it NEVER had to be made again.
Tonight I made Cheesy Sloppy Joes! They were awesome, So I thought I would post the recipe for people to try it! Now it is a Weight Watcher meal and it is a lot of food.
Prep time 5min cook time 15 min serves 6 and if you are on WW it is 4 points per serving
1/2 pound lean ground beef
1 (10 ounce) pkg frozen mixed veggies I used mixed peas carrots and corn
1 (6ounce) can tomato paste
1 (1.3 or 1.5 ounce) pkg sloppy joe seasoning mix
3 Whole wheat hamburger buns
6 (3/4 ounce) slices fat free cheddar cheese
Heat a lg nonstick skillet over med heat. Add the beef and cook discard any drippings
Stir in the mixed veggies. 1 1/3 cups water, the tomato paste and seasoning mix. bring to a boil reduce hear and simmer for approx 10 min stirring when needed
Meanwhile preheat the broiler. Place buns cut side up on broiler rack and broil 3 inches from heat, until toasted. Top each bun half with 1 slice of cheese and broil until cheese is melted. Spoon 1/2 cup of beef mixture on top of each bun half and serve at once

Then I went and ran errands when Shannon picked Kennsi up. Sunday I spent most of the day going back and forth between my house and my mom's to help my mom get her tax stuff so that she could go through it and have it ready before April.
