New Recipes

So many of you know that I have been on Weight Watchers for about 2 years now and lost 35 pounds give or take a pound. I have been on a plato for about 6-9 months now but there has been alot going on in my life as everyone knows, so I am ok with that and just happy that I have not gain the 35 pounds back! So I thought I would share a couple of recipes that I made this weekend that were awesome. I cook on Sundays to give Doreen a break and I am really liking it but do not think I could do it during the week unless I was home all day like she is:)

I decided to do this because I was talking to Beth telling her about the recipe and I thought it would be something the boys and her would like in the heat and it is super easy! (Beth if you can not find the Quinoa let me know and I will ship some with the twins birthday stuff)

Cranberry-Apple Quinoa Salad (this is a Weight Watcher Recipe)

1 Cup Quinoa rinsed (this is found in the store near the rice)
2 Cups Reduced sodium chicken broth
1 Granny Smith apple diced
1/4 cup dried cranberries
3 scallions chopped
3 tablespoons fat free citrus vinaigrette dressing
2 tablespoons toasted walnuts chopped

1) Combine the quinoa and broth in medium saucepan bring to boil. Reduce the heat and simmer covered until the quinoa is tender about 10 min drain

2) Transfer to large bowl and let cool slightly about 10 min

3) Add the apple cranberries scallions and dressing to the quinoa toss to coat sprinkle with the walnuts and serve.

No I could not find the dressing so I made a low fat citrus vinaigrette that I got off line. But to be honest I did not mix the dressing with the whole salad because I was not sure I would like it and come to find out I like it much better without the dressing! I also used dried cherries because that is what I had.

I will post the other recipe tomorrow as I am tired and it is a little longer! Hope you all try this it is really good and the quinoa is really good for you, and good! You cook it just like you would cook rice!

Update on Doreen and our weekend

So we went to the doctor Thursday to see Doreens pulmonologist (lung Doc). He put her on a strong water pill for 3 days, and highered her steriods temporarly. Her lungs had a good amount of water in them, and that is not good for anyone but specially not good for her. The doctor wants her to call on Monday, to let him know how she is feeling. If you ask me other than the fact that she is still having a little bit of a hard time breathing, and that she is wiped out, she is doing better. So we will see what the doctor says Monday and how she is feeling!

Now for the weekend, the forth was nice we stayed home in the morning and went to my Uncles to eat and then came home. It was really nice day. Saturday I got up and went to mom's house and finsihed packing the kitchen stuff that needed to be packed. Then we were going to the fair, to just look around and get out of the house for a couple of hours. We get to the fair with our Starbucks and we are getting out of the car and my mom decides she wants to trip on the packing stump and fall to the ground! Luckly her scotter was right there and she fell more into the scooter than flat on the ground. But for you people that read this that do not know my mom has 2 hip replacements and it is very bad to fall like that, and or be in the postions she had to be in to get up. She is ok she has some goose eggs and scuffed knee, and stiff but she is ok. It was very scary to watch her fall it was like slow motion and I had no idea what to do but watch her to make sure she did not hit her head, and by some miracle she did not I think it shocked her more than anything. Tomorrow morning I do not think she is going to be able to move very well, but hopefully she will be ok. I have been making her walk about every 30 min since we got home so she would not stiffen up!

Ok so sorry for this being so long but wanted everyone to know what has been going on in my neck of the woods! I really am looking forward to our trip to Reno the end of this month because let me tell you I NEED A BREAK!!! Between Doreen being sick and moms leg injury that had been bothering her, and the house remodel I have not had anytime the last 2 weeks to myself and let me tell you that I am ready to run away! Enough ranting I am going to bed now!
